Remy is a sophisticated dining concept exclusively for adults on the Disney Dream & Disney Fantasy . It boasts an exquisite, top-deck atmosphere with incredible ocean views. Remy serves French-inspired gourmet cuisine, from a menu created by award-winning Chefs.

Responsibilities :

  • Assists the Executive Pastry Chef Remy with implementation and preparation of all pastry food items, using standardized recipes, as directed by the Executive Chef de Cuisine Remy.

  • Provide the culinary vision that inspires and motivates Remy pastry staff to deliver an exceptional “world class” dining experience

  • Responsible for Remy pastry department when Chef Patissier is not available.

  • Monitors and enforces all standard operating procedures and provides feedback to management

  • Coordinate all Remy pastry and bakery offerings, including group offerings and special requests

  • Monitor all Pastry/Bakery Culinary standards in Remy restaurant

  • Meet or exceed Disney Cruise Line and Vessel Sanitation Program (VSP) requirements in area of responsibility; prepare and lead culinary team through multiple internal inspections conducted on a weekly basis

  • Oversee proper menu preparation for all allergy and special dietary needs; ensure training and preparation are in accordance with strict company guidelines

  • Monitor handling and maintenance of operating equipment; proactively report maintenance needs through onboard electronic maintenance request system

  • Strive to meet and exceed guest expectations, never compromising safety and quality, taking corrective action whenever necessary

  • Broaden the understanding of the Disney philosophy for the cast and crew; exemplify professional standards, communication, development, work habits and productivity

  • Sees that quality standards are followed and takes corrective action when needed

  • Understands and instructs his crew in the preparation of pastries, cakes and crèmes

  • Attends weekly culinary meeting as well as any other meetings called for by management

  • Emergency Duties as specified in the ship’s Assembly Stations and Emergency Functions Plan

  • Safety Management System - uphold the general safety management responsibilities specified in SMS in areas and operations under their control.

Basic Qualifications :

  • Minimum 2 years Chef de Partie experience within fine dining Patisserie, equivalency of 1 star Michelin or above

  • Strong Western/European find dining training and skills

  • Excellent working knowledge of pastry and bakery products, services, and equipment

  • Ability to calculate and convert recipes

  • Be at least 21 years of age

  • Be able to speak, read and write fluent English

  • Willingness to live and work onboard one of our vessels for a certain length of time (based on position)

  • Be able to work a seven-day, 70-84 hour week with limited time off

  • Be able to adhere to Disney Cruise Line appearance guidelines

  • Agree to share a cabin with other crew members

  • Enjoy working in a high-volume, fast-paced, guest-service oriented environment

  • Be flexible with your work schedule, job duties and work locations

  • Appreciate diversity among guests and crew

Preferred Qualifications:

  • Certified Pastry Chef or equivalent degree in Culinary Arts preferred.

Additional Information :


To be eligible for the hiring incentive, crew member must be in the eligible position continuously for at least 90 days after hire and be employed by Disney Cruise Line at the time of payment. A crew member is hired after successfully starting a Disney Cruise Line Crew contract, completing Disney Traditions and embarking the assigned vessel. Payment will be made approximately two-three weeks after the 90 day milestone is achieved. Disputes concerning eligibility to a hiring incentive shall be resolved by Disney Cruise Line Recruitment in its sole and absolute discretion. The incentive offered is subject to change at any time, with or without notice. Crew members hired prior to June 1, 2022 and after September 1, 2022 will not be eligible for an incentive award.

  • Be willing to be appreciative of working and living in a multi-cultural environment

  • Be comfortable living in a confined space with strict rules and regulations

  • Adhere to a structured lifestyle, personally and professionally

  • Have a valid passport and C1/D Seaman's visa (DCL will provide you with documents to obtain this)

  • Bring approved work shoes
